I've played a few games now and I have some notes on some ideas for the game interface. I'm not sure if I would consider any of these problems or solutions, but it's more of a brainstorming list.
Visualization of opponents' boards in multi-player games
* As far as I can tell, the only thing you can see of your opponents is their scores and their rolls in the game log. It would be neat to have at least an idea of how their board is shaping up. Without that, I'm not sure if a multi-player game offers any benefit over playing solitaire and comparing scores.
Dice image
* The dice being grayed out before you select them confused me a bit at first. I know there needs to be a distinction between selected and not, but my first reaction was that the dice had yet to be rolled. Also, a slightly 3d look to the dice might be nice.

* Several times I selected the dice I wanted to reroll and clicked before remembering it was the opposite. One idea I had was a light red X overlaying the dice that would be rerolled. I think that might be clearer than grayed out/not grayed out.

Dice image --> You have the tooltip that helps you. And once you know, it's easy and fast to roll/reroll. Moreover you have the animatiion that shows when the dice are rolled. I will think about the 3d images

I need to find another multi-player game to see how the other players' progress shows up. I must have missed it in the last one I played. Multi-player games are hard to find so far.
Just checked your changes on a solo game and I really like the implementation. I definitely think the red x is an improvement and also gets rid of the confusion about what dice I've rolled.
The scores written on the scoresheet looks great. In my opinion, that's a big improvement.

It would be difficult to display 7 boards on the same page, expecially for the mobile phone.
In turn based multi-player, since anyone can trigger a scoring break, not knowing how close other players are can be pretty detrimental. I'm not sure how you would provide that information, though, for that many players.
Maybe just showing a set of numbers for each player for how high they are on each track, or possibly a board or a selectable overlay that shows all the players colors on one board?
Then again, I might be alone in wanting something like that.
Since it is already suggested here, I will just add on...
We were playing a two player game, and it was weird/difficult to have to try to remember what was going on on the other board. Both players at our table thought this would be a useful feature and would make gameplay better.
Since you are affected by what the other player does, having the board be hidden during your turn makes it confusing.
This game can be played with no limit of max number of player. I limited it to 7... and it would be difficult to put on a single web page, visible on mobile phone, 7 different boards.
In turn-based, though, you rarely or never see the game during another player's turn.
One way around it might be to restrict the game to real-time only when it goes to beta. I know of at least one other game that has done that.
